Wild Game Sweet Chili

Wild Game Sweet Chili1 lb. ground meat—bison, buffalo, deer, you name it
1/2 c honey
6 c dry beans
1 c brown sugar
2 onions, chopped
6 T maple syrup
8 cl garlic, minced
1 beer
1 lb. bacon, chopped
2 t cinnamon
2 t salt
1 t ea. cloves and allspice
1 t black pepper
2 T chili powder
1/2 jalapeño
1–2 t Tabasco
2 No. 2 cans tomatoes
1/4 c Worcestershire sauce


  • Brown meat in Dutch oven. Add beans, onion, garlic, bacon, and S&P. Pour beer and enough water to cover beans. Cover and simmer 1–2 hours until the beans are tender.
  • Add tomatoes, jalapeño, and seasonings. Continue to simmer another hour or until flavors have melded nicely.
  • Serve with a dollop of sour cream on top and a healthy wedge of corn bread on the side.
