Southern Flounder
Paralichthys lethostigma
Southern flounder blend right in when they lie flat on the mud bottom of coastal bays. These flatfish change the color of their upper side to match the color of the mud so the crabs and shrimp they eat won't see them until it's too late.
Texas waters boast more than 25 flatfish species of which southern flounder are the largest.
